The Opportunity:
The Executive Steward is responsible for leading the Stewarding department to ensure the highest standards of cleanliness, hygiene, and operational efficiency across all back-of-house areas. This role supports culinary and food and beverage operations, enforces hygiene compliance, manages inventory and procurement, and fosters a culture of safety and excellence
Key Responsibilities
- Oversees cleanliness and hygiene in all stewarding areas, ensuring compliance with HACCP, OSHA and local health regulations.
- Knowledgeable about MSDS, expertise in chemical safety, regulatory compliance, and hazardous materials management. Adept at overseeing operations in environments where chemical handling is critical.
- Responsible for training all teams on chemical cleaning requirements.
- Work hands on with the stewarding team across all shifts to ensure performance consistency.
- Implement and monitor the Food Safety Management System (FSMS), including hazard analysis, critical control points, and verification procedures.
- Conduct daily inspections of kitchens, restaurants, and food storage areas to ensure food safety standards are upheld. Ensure consistent cleanliness of all work areas.
- Ensure that all food and beverage outlets are supplied with appropriate equipment as required to support smooth operations.
- Prepare and manager departmental budgets and staffing schedules.
- Lead quarterly inventories of chinaware, glassware, silverware, and operating equipment; monitor breakage and loss.
- Manage procurement, inventory control, and cost-effective use of chemicals, cleaning supplies, and stewarding tools.
- Monitor and control breakage costs, and implement effective measures to minimize losses.
- Ensures that the correct procedures are followed for the use of the dishwashing machine and the storage of china, glassware and silver.
- Ensure proper use and maintenance of dishwashing machines and other stewarding equipment. Report all equipment malfunctions promptly to the Engineering/Maintenance Department or third party vendors where applicable.
- Collaborate with outlet managers, Executive Chef, and Director of Event Services to support smooth operations and service delivery. Foster effective interdepartmental collaboration and communication.
- In coordination with Human Resources Department and the executive chef, participate in selection and interviewing of stewarding staff. Additionally, arrange the recruitment of temporary staff when necessary, ensuring proper supervision and adherence to operational standards.
- Maintain a professional appearance and hygiene standards across stewarding team.
- Liaise with vendors and Health Department representatives as necessary to ensure compliance and operational efficiency.
- Create and maintain an Operations Manual detailing hygiene policies, procedures and performance standards.
- Promote sustainability initiatives such as waste reduction, eco-friendly product sourcing, and energy conservation.
- Utilize digital tools for inventory tracking, scheduling, and maintenance reporting.
- Collaborate with Security manager to develop emergency response protocols for stewarding areas, including fire safety and chemical handling.
- Implement appropriate training programs for all stewarding personnel to meet departmental objectives and performance standards, while supporting their individual development.
- Undertake any other reasonable duties assigned by supervisors or Hotel management including special projects and tracking deep clean initiatives.

The annual salary range for this position is $68,640-$96,400
Qualifications
Qualifications
- High School Diploma or equivalent required; Bachelor's Degree preferred.
- Culinary education preferred.
- Relevant certifications as required to comply with local and state regulations.
Skills
- Strong knowledge of HACCP, OSHA, Local health organizations and sustainability practices.
- Excellent leadership and team management abilities.
- Highly organized with strong attention to detail.
- Effective communication and collaboration skills.
- Data-driven decision making and performance tracking.
- Conflict resolution and change management capabilities.
- Cultural sensitivity and adaptability in diverse team environments.
Experience
- Minimum of two years' experience in a similar role or capacity.
- Preferably experienced in managing food and hygiene standards across various types of kitchens and restaurants.
- Previous leadership experience in a similar role or strong operations background in hotel, resort or casino setting will be highly regarded.
- Prior experience working with local hygiene authorities, either through direct contact or previous employment, is an advantage.
